Recipe: Meat Loaf

It’s not the most exciting thing in the world, but when it comes to eating something hearty and nostalgic, there’s almost no substitute for meatloaf. Thing about it- it’s a brick of meat! What could be more indicative of a meal that will undoubtedly fill your tummy and warm your heart? Nothing. Pair it with some veggies and a potato, and you’ve got an All-American meal on your hands. Here’s our fave recipe for a good, classic meatloaf:

Meat Loaf

Ingredients:

  • 2 eggs, beaten
  • ¾ cup milk
  • 2 cups Italian seasoned bread crumbs
  • ¼ cup finely chopped onion
  • 2 tbsp fresh parsley
  • 1 tsp salt
  • ½ tsp dried leaf sage, basil, or oregano
  • 1/8 tsp black pepper
  • 1 lb lean ground beef
  • ½ cup ketchup
  • 4 tbsp brown sugar
  • 2 tsp dried mustard

Directions:

  1. In a bowl, combine eggs, milk, bread crumbs, onion, spices, salt/pepper. Add meat. Mix well with hands.
  2. Pat into a 8x4x2 loaf pan.
  3. Bake at 350 degrees (f) for one hour and 10 minutes. In the last 10 minutes, combine ketchup, brown sugar, and dried mustard and spread over top of meatloaf, cook for remaining time.

    another idea is to put bacon strips on top before baking…with the sauce under @ same time. Delish!

    Oh I got a good one…
    -Marinated Pork Tenderloin, sided with a mix of risotto, mozzarella cheese, and pine nuts and roaster peppers.

    Just had this meatloaf dish a few days ago and it was great! Nice touches.

        Since my blog is all about baking and fulfilling my insanely large sweet tooth, I unfortunately do not have a recipe for this! But it is really simple. I bought a Trader Joe’s pre marinated tenderloin which is amazing by the way and cooked for an hour. Do how ever much risotto you would like and add mozzarella to taste. Roast the pine nuts separately with a bit of oil and add to risotto once done. The roasted peppers are self explanatory. Oil and large pieces of peppers=roasted peppers. Hope you enjoy!     My son made a meatloaf stuffed with onion and cheese perogies for dinner one night. It sounded a little weird, but it tasted fantastic.
